Farmhouse aged in Oak, 750ml 6.7 23.00

From the brewer:

Golden Door is a recipe inspired by old world saison tradition comprised of water, barley, oats, spelt, wheat, European hops, yeast, and bacteria.

Bottle conditioned, reserve sediment when pouring.

The Take Away:

Golden Door (6.7%) is a mixed fermentation saison aged in oak barrels that will be available in 750mL bottles in the Tasting Room to purchase for a limited time for onsite consumption or to-go beginning November 24th.

The complexities in this beer are largely derived from the time spent aging in French oak barrels in our barrel room over the course of a year. Golden Door is an expression of our house-mixed culture of yeast and bacteria, and time.  The aroma is comprised of citrus, mushroom, stone fruit skin, and hop funk. There is a creaminess to the mouthfeel that plays well off the stone fruit notes that our house culture presents, creating a peaches and cream flavor with hints of lemon, oak, cellar must, floral, and grains.  The flavor of the beer is driven by its time aging in wood. Golden Door was bottled in April of 2017 and ready to drink now or may be cellared for 2-3 years at the proper temperature.

The name is derived from a George Washington Carver quote: “Education is the key to unlock the golden door of freedom.” A quote that is relevant because of the agricultural tradition of saison brewing, and because of the knowledge we’ve gained as a brewery over time which has allowed us to present this elegant and complex beer derived from simple means.

“As saisons were made for farmers and fieldworkers, we wanted to honor a person who made a difference in the agricultural community, especially in Georgia,” says Wood Cellar and Specialty Brand Manager, Blake Tyers. “We take inspiration from the curious thinkers, inventors, artists, and explorers, and with saisons being so important to agriculture we picked out George Washington Carver and used a quote of his to name the beer.”

Golden Door was aged in oak barrels for one year, bottled in April 2017, and has been bottle conditioning since that time.
