A collaboration with Cloudwater Brew Co. nearly 2 years in the making, this saison brewed with apples aged in oak barrels (7.5%) was made with Mercier Orchards apples, local honey from UGA Honey Bee Lab, DaySpring Farms wheat, and our house culture. The beer aged in oak barrels for over a year. Cloudwater focuses on the seasonality of the ingredients around them as well as the time in which beer is enjoyed. We were inspired by this philosophy and the history of apples and cider in England when we decided to use local apples that were in season. This was also the first time we’ve ever bottle conditioned with honey!
